Dutch Oven Recipes

Easter Bread
2 pkg. Yeast
1/2 cup warm water
3/4 cup butter
2 tbsp. grated lemon peel
2 cups warm milk
1 to 1 1/2 cup raisins are optional

4 eggs
2 tsp salt
1 tsp. vanilla
1 tsp. lemon juice

6 egg yolks
1 cup sugar
9 cups flour

Dissolve yeast in water. Beat eggs & yolks together, gradually add sugar. Add butter, salt, lemon, milk and yeast mixture. Beat well. Add 6 cups flour and beat well again. By hand mix in enough flour to form a soft ball dough. Knead in raisins if desired and until dough is of good consistency. Place in greased bowl or lightly warmed greased 12 inch Dutch Oven. Turn to grease coat dough. Let double in size and then punch dough down. Divide into 3rds and shape as desire. Bake at 325 degrees in a greased loaf pans for 45 minutes or 25 briquettes in 12 inch Dutch Oven till done, about 30 minutes. From the Log Cabin Holidays & Traditions cook book page 53.

Wendy's Black Pot Deer Roast
1 can mushroom soup
1 can crushed tomatoes
1 pkg. dry onion soup mix
Salt & Pepper to taste
1/4 cup Cider Vinegar
3 to 4 pounds roast (use beef, pork, elk, deer, or moose.)
2 small cans green chilies

Mix first five ingredients together in a 10 inch warmed and oiled Dutch Oven. Add roast and spoon mixture over it. Roast will be almost covered. Top with Chilies. Cover and bake in your oven at 300 degrees fro 3 to 4 hours. From the Log Cabin Presents Lewis & Clark cook book page 33.

Sour Cream Coffee Cake
3/4 cup butter
2 cups sugar
2 eggs
2 cups flour
1 tsp baking power
1/2 tsp salt
1 cup sour cream
1 tsp vanilla

Cream butter and sugar. Add eggs and beat well. Blend in vanilla. Add four, baking powder and salt. Blend in sour cream. Pour 1/2 the batter in a greased 10 inch Dutch Oven. Sprinkle with brown sugar, cinnamon and chopped nuts. Add remaining batter and bake at 350 degrees for 1 hour. Check and cook another 20 minutes if not pulling from sides of Dutch Oven. Glaze with powered sugar, vanilla and milk mixture. From the Log Cabin Left Overs Cook Book page 61.
